Grilled Chicken with Mango & Tossed Greens

Ingredients

2 chicken breast, boned, skinned and halved

Marinade:

1/2 cup soy sauce

1/2 Tablespoon vegetable oil

1/8 cup GOLDEN BLOSSOM HONEY

1/8 teaspoon dried ginger

1 garlic clove, mined

1/2 Tablespoon grated orange zest

Salad:

1/2 pound green beans

1 head red leaf lettuce, torn into small pieces

1 small head radicchio, torn into small pieces

1 mango, peeled and diced

Dressing:

2 Tablespoons red wine vinegar

2 Tablespoons GOLDEN BLOSSOM HONEY

4 Tablespoons olive oil

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Marinade: Combine above ingredients in a bowl. Add chicken breasts. Marinate, at least 1/2 hour. Grill about 7 minutes on each side, until cooked. Slice into bite-size pieces.Salad: Slice green beans on the diagonal into 1-inch pieces. Blanch in boiling water for 2 minutes. Drain and rinse in cold water. Combine beans with remaining salad ingredients.Dressing: Whisk dressing ingredients together. Toss with salad and sliced chicken. Serve immediately. Serves 4.
