Warm Potato Salad

Ingredients

3 pounds small red and golden potatoes, unpeeled

1/4 cup olive oil

1 teaspoon dill seed

1/2 cup celery, chopped

1/4 cup fresh parsley, chopped

3 tablespoons apple cider vinegar

3 tablespoons GOLDEN BLOSSOM HONEY

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Cut potatoes into bite size pieces. Boil in salted water until just tender. Drain and set aside in a large bowl.Heat olive oil in a small skillet and saute dill seeds, celery and parsley until celery is tender. Pour over potatoes. Toss gently. Whisk together apple cider vinegar and honey in a small bowl. Pour over potatoes and toss gently to mix. Salt and pepper to taste. Serve warm or a room temperature.Serves: 4-6
