Turkey Salad with Cherries and Walnuts

Perfect for the hot summer nights when you crave a salad. Add a loaf of crusty bread and you have a very nice main dish.

Ingredients

1 pound smoked turkey breast, diced (ask the deli to slice a thick piece)

1/2 cup scallions, chopped

3/4 cup celery, chopped

1/3 cup mayonnaise, regular or low-fat

1/2 teaspoon dried thyme or 2 teaspoons fresh thyme

2 cups fresh cherries, pitted and coarsely chopped

1/2 cup walnuts, toasted and coarsely chopped

5 tablespoons olive oil

3 tablespoons white wine vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

salt and pepper to taste

10 ounces mixed baby greens

Honey Is Sweeter Than Sugar

Due to the high level of fructose, honey is 25% sweeter than table sugar.

Directions

In a bowl combine diced turkey, scallions, celery, mayonnaise and thyme. Add cherries and walnuts and gently toss.
Whisk together olive oil, vinegar, honey and salt and pepper. Toss greens with dressing.
Place greens on a plate. Top with turkey salad.
Serves: 4
