Autumn Wild Rice Salad

Nutty wild rice pairs with crunchy apples, celery and walnuts in this scrumptious salad.

Ingredients

Rice:

1 cup wild rice

1 cup celery, chopped

1 red apple, cored and diced, no need to peel

1/2 cup walnuts, toasted

1/3 cup golden raisins

1/4 cup scallions, minced

1 tablespoon fresh basil, chopped

Dressing:

1/3 cup olive oil

1/4 cup apple cider vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1/2 tablespoon Dijon mustard

salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Rice:
Bring 3 cups of water to a boil in a medium saucepan. Stir in wild rice, cover, reduce heat and simmer for 45 minutes or until rice is tender and splitting open. Drain off excess water. Spoon into a large bowl, let cool.
Meanwhile, whisk together all dressing ingredients.
Once rice is cooled, add remaining ingredients. Toss with dressing and refrigerate until ready to serve.
Serves: 4-6
