Cod with Sauteed Onions and Peppers

Cod is an ideal fish for baking, topped here with sautéed onions and sweet red peppers. The golden raisins add a delightful sweetness to the preparation.

Ingredients

1/2 tablespoon olive oil

2 cups onions, sliced

1 red bell pepper, cut into strips

2 tablespoons golden raisins

3 tablespoons balsamic vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1/8 teaspoon salt

1/4 teaspoon pepper

4 (6-ounce) cod fillets

Directions

Preheat oven to 450°.
In a large skillet, heat oil. Add all ingredients except fish. Cover and cook 10 minutes, stirring occasionally. Keep warm.
Meanwhile, brush a shallow baking pan with oil. Place fish in pan and sprinkle with salt and pepper to taste. Bake in preheated oven about 12 minutes or until fish flakes easily.
To serve, top fish with onions and pepper mixture.
