Mediterranean Pasta with Shrimp and Tomatoes

Tender shrimp, fresh tomatoes and basil make this sauce sensational. Topped with melting feta and crunchy chopped scallions, this dish is special enough for company.

Ingredients

1 pound linguine

3 tablespoons olive oil

3 large cloves garlic, minced

1 1/2 pounds fresh plum tomatoes, coarsely chopped

2 tablespoons GOLDEN BLOSSOM HONEY

1 pound medium shrimp, peeled and deveined

1/2 cup fresh basil, chopped

6 ounces feta cheese, crumbled

1 bunch scallions, chopped

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Cook pasta according to package directions. While pasta cooks prepare sauce.
In a large skillet heat olive oil. Add garlic and sauté 2-3 minutes. Add chopped tomatoes and simmer over medium heat 5 minutes, stirring occasionally. Stir in honey. Add shrimp, cover and cook 3-5 minutes until shrimp turn pink. Add basil.
Spoon sauce over pasta. Top with feta cheese and sprinkle with scallions.
