Twice Baked Yams

Dried cranberries and walnuts provide an interesting contrast to the velvety texture of the yams. This dish is sure to receive raves from all around the holiday table.

Ingredients

2 (10 ounce) yams

2 tablespoons butter, melted

2 tablespoons GOLDEN BLOSSOM HONEY

2 tablespoons dried cranberries

4 tablespoons walnuts, chopped

Directions

Preheat oven to 325°.
Scrub yams and pierce all over with the tines of a fork. Bake on oven rack for 1 1/4 hours or until tender. Remove from oven to cool slightly.
Cut yams in half lengthwise. Scoop pulp from each potato leaving a 1/4-inch shell. Place pulp in a bowl along with butter and honey. Mash until pulp is smooth. Mix in cranberries. Spoon mixture evenly back into shells. Top with walnuts.
Place on a baking sheet and bake about 20 minutes longer, until hot.
Yields: 4 halves
