2 (10 ounce) yams
2 tablespoons butter, melted
2 tablespoons GOLDEN BLOSSOM HONEY
2 tablespoons dried cranberries
4 tablespoons walnuts, chopped

Directions
Preheat oven to 325°.
Scrub yams and pierce all over with the tines of a fork. Bake on oven rack for 1 1/4 hours or until tender. Remove from oven to cool slightly.
Cut yams in half lengthwise. Scoop pulp from each potato leaving a 1/4-inch shell. Place pulp in a bowl along with butter and honey. Mash until pulp is smooth. Mix in cranberries. Spoon mixture evenly back into shells. Top with walnuts.
Place on a baking sheet and bake about 20 minutes longer, until hot.
