Orange and Avocado Salad

Green avocado and red cranberries add a festive holiday flair to this delicious salad.

Ingredients

Dressing:

1/4 cup olive oil

2 tablespoons balsamic vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

salt and pepper to taste

Salad:

1 (6 ounce) package fresh baby spinach leaves

2 naval oranges, peeled and divided into sections

1 large ripe avocado, peeled and sliced

4 thin slices red onion

1 tablespoon dried cranberries

2 tablespoons walnuts, chopped

Directions

Whisk together all dressing ingredients in a small bowl.
Place spinach leaves on a platter. Arrange orange sections, avocado, and onion slices on top of spinach. Sprinkle with cranberries and walnuts. Drizzle with desired amount of dressing.
