Arugula Salad with Lemon Vinaigrette

Fresh crisp peppery arugula pairs nicely with the lemon flavor of the dressing in this simple salad.

Ingredients

1 (5 ounce) package baby arugula leaves

1 small red onion, halved and thinly sliced

16 long shavings of Parmesan cheese

Dressing:

1/3 cup olive oil

3 tablespoons fresh lemon juice

2 tablespoons GOLDEN BLOSSOM HONEY

salt and pepper, to taste

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Place arugula and onion in a salad bowl.
Whisk together all dressing ingredients. Toss greens and onion slices with just enough dressing to lightly coat leaves. Divide evenly between four bowls. Place 4 cheese shavings on top of each salad.
