Ingredients
Relish:
1 tablespoon olive oil
2 large onions (about 2 cups), peeled, halved and sliced
1/4 cup GOLDEN BLOSSOM HONEY
2 fresh peaches, peeled and chopped
1/3 cup apple cider vinegar
1/3 cup dry sherry
1/4 teaspoon coarse ground black pepper
salt to taste
Chicken:
2 whole chicken breasts, halved, skinned and boned
2 teaspoons olive oil
salt and pepper to taste
4 crusty rolls cut in half
romaine lettuce leaves
Honey Tips
Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Heat oil in a large skillet. Add onion slices and sauté 5-8 minutes until onions are softened and golden. Add honey and peaches, stirring often. Cook 5 minutes. Add vinegar, sherry, pepper and salt. Cook, stirring for 5-10 minutes until mixture is thickened. Pour in a bowl to cool.
Place chicken breasts in a plastic bag and pound gently until 1/4-inch thick. Brush lightly with oil and sprinkle with salt and pepper.
Grill or broil chicken until just no longer pink inside, about 4 minutes per side. Remove from grill. Place one breast on each roll. Top with a spoonful of relish and then lettuce leaves.
