Turkey Tostadas

Looking for a recipe for your leftover turkey? This Mexican inspired entrée is perfect served with a side of warm black beans topped with sour cream and a few slices of fresh cilantro.

Ingredients

2 (14.5 ounce) cans diced tomatoes

1 medium onion, thinly sliced

1-2 tablespoons canned chopped jalapeno peppers (according to taste)

2 tablespoons GOLDEN BLOSSOM HONEY

4 cups cooked turkey, shredded

Avocado Sauce:

1 avocado

1/3 cup prepared salsa

2 tablespoons sour cream

2 tablespoons fresh cilantro, chopped

8 tostadas

4 cups romaine lettuce, thinly sliced

8 tablespoons cotija (Mexican cheese), crumbled or Monterey Jack cheese, shredded

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

In a medium saucepan combine tomatoes, onion, jalapenos and honey. Bring to a boil. Reduce heat and simmer over medium 20 minutes. Stir in shredded turkey and heat through.
In a bowl combine avocado, salsa, sour cream and cilantro. Mix with a fork until well combined.
To serve place 2 tostadas on each plate. Spread avocado sauce over tostadas. Spoon on turkey mixture. Top with shredded lettuce and 1 tablespoon of cheese.
