Apples and Roquefort with Mixed Greens

Ingredients

Salad:

6 cups mixed salad greens

3 cups watercress, trimmed

2 small Belgian endives, separated and rinsed

3 Tablespoons olive oil

4 Red Delicious apples, peeled, cored and sliced

1 1/2 Tablespoons GOLDEN BLOSSOM HONEY

1 cup roquefort cheese, crumbled

1/2 cup walnuts, chopped and toasted

Dressing:

1/4 cup red wine vinegar

1 teaspoon dried thyme

1/2 cup olive oil

salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Salad: In a salad bowl, combine greens, watercress and endives. Heat olive oil in a skillet. Saute apples until tender. Stir in honey and cook 2 minutes. Place apples on top of salad greens with roquefort cheese and walnuts. Pour half of salad dressing over salad and toss. Add more dressing as desired. Serves 4-6.Dressing: In a medium bowl, combine vinegar and thyme. Slowly drizzle in oil, beating constantly.
