1 1/2 pounds chicken thighs, boneless and skinless
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups fresh cranberries
1/3 cup GOLDEN BLOSSOM HONEY
1/2 cup onion, chopped
3/4 cup orange juice
2 teaspoons cinnamon
1/4 teaspoon ground ginger

Directions
Melt butter in a large skillet. Sprinkle chicken with salt and pepper. Add to skillet and brown over medium heat 8-10 minutes, turning often.
Meanwhile in a saucepan combine cranberries, honey, onion, orange juice, cinnamon and ginger. Bring to a boil. Simmer 5 minutes over a low heat. Pour into skillet over browned thighs. Cover and simmer on low 10 minutes, spoon sauce over chicken occasionally.
