Baked Yams with Pecans

Just in time for your holiday dinner, a new delicious yam recipe with a twist.

Ingredients

4 yams

1/3 cup GOLDEN BLOSSOM HONEY

1/3 cup orange juice

1 tablespoon grated orange zest

1/4 cup bourbon

1/2 cup pecans, coarsely chopped

1 tablespoon butter, cut into small pieces

Honey Is Sweeter Than Sugar

Due to the high level of fructose, honey is 25% sweeter than table sugar.

Directions

Preheat oven to 375°. Lightly oil a 2-quart casserole dish.
In a large pot, boil yams until just becoming fork tender, approximately 10-12 minutes. Drain and rinse under cold water. Peel and slice into 1/4-inch thick slices.
In a small bowl whisk together honey, orange juice, orange zest and bourbon.
Arrange half of the yam slices in prepared pan. Pour 1/2 of the honey mixture over yams. Sprinkle with half of the pecans. Layer remaining yams on top. Pour remaining honey mixture over all. Sprinkle with remaining pecans. Dot with butter pieces.
Bake 40 minutes uncovered, basting occasionally with pan juices. Remove from oven. Let sit 5 minutes before serving.
