Ingredients
4 cans (15 ounces each) sliced beets, drained
1 cup fresh chives, minced
1 cup fresh parsley, minced
3 tablespoons Dijon mustard
3/4 cup GOLDEN BLOSSOM HONEY
4 tablespoons balsamic vinegar
salt and pepper to taste
1/2 cup walnut pieces, toasted

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Mix together beets, chives and parsley. Set aside.
In a small bowl, stir mustard, honey and vinegar until smooth. Pour over beet mixture and toss to coat thoroughly. Season with salt and pepper. Sprinkle with walnuts. Marinate at room temperature for several hours before serving.
