Butter Lettuce Salad with Pears and Walnuts

The more assertive flavors of pears, walnuts and cranberries are a perfect complement to tender butter lettuce.

Ingredients

Salad:

1 head butter lettuce, torn into 1-inch pieces

1 large crimson pear, cored and thinly sliced (no need to peel)

1/2 cup dried cranberries

1/4 cup walnuts, toasted

1/4 cup scallions, chopped

Dressing:

3/4 cup plain yogurt

3 tablespoons GOLDEN BLOSSOM HONEY

3 tablespoons fresh lemon juice

salt and pepper to taste

Directions

In a large bowl toss lettuce, pear slices, cranberries, walnuts and scallions.
In a small bowl combine yogurt, honey, lemon juice, salt and pepper. Pour over salad and toss. Serve immediately.
