Chicken Salad with Strawberries and Nectarines

This perfect summer main course salad is healthier, more delicious and quicker than take-out! Fresh luscious fruit and a creamy dressing make it irresistible.

Ingredients

Dressing:

1/3 cup mayonnaise, regular or lite

1/3 cup sour cream, regular or lite

2 tablespoons GOLDEN BLOSSOM HONEY

3 teaspoons lemon juice

1/2 teaspoon curry powder

1 teaspoon poppy seeds

Salad:

1 cooked rotisserie chicken, from grocery store

2 cups fresh strawberries, sliced

2 ripe nectarines, sliced

1/4 cup thinly sliced red onion

1/3 cup pecans, coarsely chopped

6 cups mixed baby greens

4 strawberries for garnish

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Dressing:
In a small bowl whisk together all dressing ingredients.
Salad:
Remove meat from chicken and cut into bite sized chunks. Place in a large bowl along with strawberries, nectarines, sliced onion and pecans. Toss with desired amount of dressing. Refrigerate for up to 2 hours.

To serve, divide salad greens between 4 plates. Spoon chicken mixture on top of greens. Top each salad with a strawberry.
