Ingredients
2 whole chicken breasts, skinned, boned, and halved
1/4 cup flour, 1/2 teaspoon salt, 1/4 teaspoon pepper, blended together
3 Tablespoons butter or margarine
2 1/2 Tablespoons shallots, finely chopped
1 Tablespoon GOLDEN BLOSSOM HONEY
1 cup half & half
1/2 cup cantaloupe, diced
1/2 cup green seedless grapes

Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Dip chicken in flour mixture. Shake off excess. Over medium heat, in a large heavy skillet, melt 2 Tablespoons butter. Sauté chicken for 5 minutes. Turn and add 2 Tablespoons shallots and honey. Sauté an additional 5 minutes, or until chicken is done. Transfer chicken to a plate. Add half and half to skillet and simmer about 4 minutes until thickened, stirring occasionally. Return chicken to skillet and simmer until heated through. In a medium skillet melt remaining 1 Tablespoon of butter. Add cantaloupe, grapes and remaining ½ Tablespoon of shallots. Sauté 1 minute. Spoon fruit over chicken and serve. Serves 4.
