Ingredients
2 Cornish game hens
1/3 cup GOLDEN BLOSSOM HONEY
1/4 cup lime juice
1 1/2 tablespoons dried rosemary
1 apple, coarsely chopped
1 pear, coarsely chopped
2 kiwi fruits, peeled and coarsely chopped
1/2 cup cranberries

Honey has different flavors and colors, depending on the location and kinds of flowers the bees visit. Climatic conditions of the area also influence its flavor and color.
Directions
Preheat oven to 350°.
Rinse hens and pat dry. Clean cavity and discard giblets. Carefully separate the skin from the flesh of the birds.
In a small bowl, whisk together honey, lime juice and rosemary. Spread mixture under the skin of hens.
Spray roasting pan with non-stick cooking spray. Place hens in pan and bake for 30 minutes.
Remove from oven and arrange chopped fruit around hens. Bake an additional 30 minutes.
Serve hens garnished with baked fruit.
