Ingredients
1 head romaine lettuce or fresh spinach, rinsed, drained, broken into bite-size pieces
Dressing:
1 garlic clove, chopped
1/4 teaspoon salt
1 cucumber, peeled, seeded and chopped
1/4 cup (4 ounces) feta cheese, crumbled
1/2 cup plain nonfat yogurt
1 Tablespoon GOLDEN BLOSSOM HONEY
black pepper, to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
On a cutting board, mash together garlic and salt to make a paste. Set aside.
In a blender or food processor, puree cucumber, feta, yogurt and honey until smooth. Add garlic paste and blend well. Season with pepper.
Cover and chill dressing until ready to serve.
To serve, pour dressing over salad greens. Toss well. Can be made 1 day in advance.
