Flemenco Salad

A favorite recipe from Seville.

Ingredients

Dressing:

1/2 cup olive oil

1/4 cup balsamic vinegar

1/4 cup chopped onion

4 tablespoons GOLDEN BLOSSOM HONEY

3/4 teaspoon paprika

1/2 teaspoon dry mustard

1/2 teaspoon salt

1/4 teaspoon pepper

Salad:

1 (7 ounce) package ready-to-use spinach leaves

1 (8 ounce) can artichoke hearts, drained and quartered

4 bacon slices, cooked until crisp, drained and crumbled

2 hard cooked eggs, thinly sliced

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Combine dressing ingredients and blend well. Cover and refrigerate until ready to use.Combine salad ingredients in a large bowl. Toss with dressing.Serves: 4
