Green Bean and Tomato Salad

The bright colors of green beans and cherry tomatoes lend great visual appeal to this salad. The few simple ingredients make this colorful salad easy to prepare.

Ingredients

1 pound fresh green beans, trimmed and cut into 1 1 /2-inch pieces

18 cherry tomatoes, halved

1/4 cup red onion, chopped

1/3 cup fresh parsley, chopped

Dressing:

3 tablespoons white wine vinegar

2 tablespoons olive oil

2 tablespoons GOLDEN BLOSSOM HONEY

2 tablespoons Parmesan cheese, grated

1/4 teaspoon dried thyme

1/4 teaspoon ground black pepper

1 clove garlic, minced

salt to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Cook green beans until just crisp tender. Drain and plunge into cold water to cool. Drain well. In a large bowl toss beans with tomatoes, onion and parsley.
In a small bowl whisk together all dressing ingredients. Pour desired amount of dressing over vegetables. Toss and serve at room temperature.
