Leek Relish

Sweet and spicy, this relish is the perfect accompaniment to ham or salmon.

Ingredients

1 pound leeks

2 tablespoons olive oil

3 tablespoons fresh lemon juice

1/3 cup GOLDEN BLOSSOM HONEY

zest of one lemon

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/4 teaspoon ground allspice

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Trim leeks of outer leaves leaving white and pale parts only. Halve each leek lengthwise. Run under cold water to clean out any dirt. Slice cleaned leeks on a diagonal into 1/4 inch thick slices.

Heat oil in a large skillet. Add leeks and saute until they begin to brown. Stir in remaining ingredients. Simmer, stirring until thickened about 1-2 minutes. Remove from heat and cool.
Yields: about 1 cup
