Ingredients
Chicken:
4 Tablespoons lemon juice
2 Tablespoons GOLDEN BLOSSOM HONEY
1 1/2 pounds chicken tenders
6-8 cups various leafy greens, torn into pieces
1/2 cup almonds, toasted
1/2 cup golden raisins
3/4 cup flour
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup vegetable oil
Dressing:
4 Tablespoons fresh lemon juice
2 Tablespoons Dijon mustard
2 Tablespoons white wine vinegar
3/4 cup olive oil
salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Combine lemon juice and honey. Pour over chicken and marinate covered, for one hour. In a large bowl, toss greens with almonds and raisins. Set aside. In another bowl, combine dry ingredients. In a skillet, heat oil until just sizzling. Coat chicken with flour mixture, shaking off excess. Fry chicken until crisp, several minutes on each side. Do not overcook. Drain on paper towels. Dressing: Whisk all ingredients together. Toss greens with dressing and arrange on plates. Slice chicken tenders in half lengthwise and place on top of greens. Serves 4.
