Marinated Vegetable Salad

Try it once and you'll find yourself making this delightful salad again and again. In a hurry? Purchase broccoli and cauliflower at your supermarket salad bar.

Ingredients

Vegetables:

1 cup broccoli, separated into bite sized pieces

1 cup cauliflower, separated into bite sized pieces

1 cup fresh green beans, trimmed and cut into 1-inch pieces

1 red bell pepper, coarsely chopped

3 scallions, chopped

Dressing:

3 tablespoons red wine vinegar

2 tablespoons GOLDEN BLOSSOM HONEY

1 tablespoon olive oil

1/4 teaspoon dried thyme

salt and pepper to taste

Directions

In a medium saucepan, steam broccoli, cauliflower and green beans until just crisp-tender, about 2 minutes. Drain well and cool. Put into a bowl along with red pepper and scallions.
Whisk together all dressing ingredients. Pour over vegetables and toss. Let sit at room temperature about 15 minutes, tossing occasionally.
