Orange and Avocado Salad with Cranberry Dressing

A lovely winter salad. The cranberry dressing is just tart enough to perfectly complement the orange and avocado.

Ingredients

3/4 cup fresh cranberries

2 tablespoons water

3 tablespoons GOLDEN BLOSSOM HONEY

1 teaspoon Dijon mustard

1 tablespoon olive oil

red leaf lettuce

2 naval oranges, peeled

1 avocado, peeled

1/4 cup walnuts, toasted

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Combine cranberries, water and honey in a small saucepan. Bring to a boil and then reduce heat to medium. Cook, stirring until most of the cranberries have popped. Remove from heat. Once dressing is cool, stir in mustard and oil. Chill.
When ready to serve place lettuce leaves on plates. Cut oranges into 1/4-inch slices and arrange on lettuce. Slice avocado, arrange on top of orange slices. Sprinkle salads with toasted nuts and spoon dressing on top.
