Ingredients
1 duck
2 Tablespoons lemon juice
1 lemon, halved
1 cup ketchup
1/3 cup GOLDEN BLOSSOM HONEY
1/3 cup vegetable oil
3 garlic cloves, finely chopped
1 1/2 Tablespoons dried rosemary, crumbled

Honey Is One of the Oldest Foods
Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
Preheat oven to 400°. Spray a shallow roasting pan with cooking spray. Line bottom and sides of pan with foil. Rub duck inside and out with lemon juice. Pat dry. Prick skin thoroughly with a fork. Sprinkle salt and pepper on outside; and inside. Place lemon halves in cavity. Put duck on a rack in roasting pan and bake 30 minutes. Meanwhile, prepare the glaze by combining remaining ingredients. Reduce temperature to 350°. Pour off fat from roasting pan. Return duck to oven and cook for 30 minutes more. Remove from oven, pour glaze over duck. Cook, basting often, another 30 minutes.To serve: Allow duck to rest 15 minutes. Cut into quarters with shears. Serves 4.
