Spinach Salad with Creamy Bacon Dressing

A creamy dressing infused with the flavor of bacon is fantastic on this salad composed simply of fresh spinach leaves and sliced hard boiled eggs.

Ingredients

Dressing:

1/2 cup mayonnaise, regular or light

2 tablespoons GOLDEN BLOSSOM HONEY

2 tablespoons apple cider vinegar

4 bacon slices, cooked crisp and crumbled

Salad:

1 (9-ounce) package baby spinach leaves

1/4 cup red onion, thinly sliced

4 eggs, hard-boiled and sliced

Directions

Dressing:
In a small bowl whisk together mayonnaise, honey and vinegar. Stir in bacon pieces. Refrigerate until ready to serve.
Salad:
In a large bowl toss spinach leaves and onion with desired amount of dressing. Divide between 4 bowls. Top with egg slices.
