Turkey Meatloaf

Ingredients

1 teaspoon olive oil

1 medium onion, chopped

1 carrot, chopped

1 celery stalk, chopped

3 mushrooms, chopped

1 large clove garlic, chopped

1/2 teaspoon dried thyme

1/2 teaspoon salt

1/8 teaspoon pepper

1 Tablespoon dried parsley

1 (16 ounce) can tomatoes, drained and chopped

2 Tablespoons red wine vinegar

1 Tablespoon GOLDEN BLOSSOM HONEY

1 egg, beaten

1/2 cup dried breadcrumbs

1 1/2 pounds ground turkey

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Preheat oven to 375°. In a large skillet, heat oil. Add next 6 ingredients and saute until vegetables are tender. Remove from heat. Stir in salt, pepper and parsley. In a large bowl, combine remaining ingredients. Gently fold in vegetable mixture. Spoon into lightly oiled 9 x 5 x 3 inch loaf pan. Bake for 50 minutes to one hour. Serves 6.
