Watercress Salad

The dressing tossed warm over watercress is simply wonderful!

Ingredients

2 Tablespoons shallots, minced

3 teaspoons dijon mustard

2 teaspoons GOLDEN BLOSSOM HONEY

2 Tablespoons balsamic vinegar

1/3 cup olive oil

3 bunches watercress, rinsed and dried, stems removed

6 mushrooms, sliced thinly

8 cherry tomatoes, halved

How Honey is Made

To make honey, bees drop the collected nectar into the honeycomb and then evaporate it by fanning their wings.

Directions

Whisk together shallots, mustard, honey and vinegar in a saucepan. Over low heat slowly add oil and whisk until well combined. Continue blending until dressing is warm.
Combine watercress, mushrooms and tomatoes in a bowl. Add warm dressing and toss to coat. Serve immediately.
Serves: 6-8
