Steamed Spinach Tuscany

Ingredients

Dressing:

1/8 cup cider vinegar

1 Tablespoon balsamic vinegar

1 teaspoon GOLDEN BLOSSOM HONEY

1 Tablespoon onion, finely chopped

1 Tablespoon tomato, finely chopped

1/4 teaspoon dried thyme

2 pounds spinach, rinsed well, stems removed

2 teaspoons olive oil

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

In a small bowl, combine dressing ingredients. Heat 2 teaspoons olive oil in a large skillet or pot. Add spinach, cover and reduce heat. Let steam until tender, about 5 minutes, stirring occasionally. Serve, topped with dressing. Serves 4.
