Tomato Fritters

Our fritters are as much fun to make as they are to eat. Serve for lunch or as a side dish for dinner.

Ingredients

1 1/3 cups fresh plum tomatoes, diced, seeded and peeled

2/3 cup zucchini, finely chopped

1/2 cup onion, finely chopped

2 Tablespoons fresh mint, chopped

1 Tablespoon, plus 1 teaspoon GOLDEN BLOSSOM HONEY

1/2 cup flour

3/4 teaspoon baking powder

1/4 cup breadcrumbs

1/2 teaspoon salt

1/2 teaspoon pepper

1/4 cup olive oil (may need more)

Honey Is One of the Oldest Foods

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Combine first five ingredients in a small bowl. In another bowl combine flour, baking powder, bread crumbs, salt and pepper. Stir vegetable mixture into dry mixture.
Heat 1/4 cup of olive oil in a large nonstick skillet over medium-high heat. In batches, drop batter into oil in rounded tablespoonfuls adding additional oil if needed. Cook until brown, about 2-3 minutes per side. Transfer to paper towels to drain. Serve immediately.
