Melon with Honey-Lime Ginger Sauce

Ingredients

2 Tablespoons GOLDEN BLOSSOM HONEY

2 Tablespoons orange juice or rum

1 Tablespoon fresh lime juice

1/8 teaspoon ground ginger

1 medium honeydew or 2 small cantaloupes, diced (about 4 cups fruit)

1/4 cup minced fresh mint leaves (optional)

To make honey, bees drop the collected nectar into the honeycomb and then evaporate it by fanning their wings.

Directions

Whisk together first 4 ingredients. Toss with diced fruit. Cover and refrigerate up to 3 hours. Serve in parfait glasses. Sprinkle with fresh mint, if desired.
