Creole Style Beans

Delicious rolled up in a flour tortilla or as a side dish.

Ingredients

2 tablespoons olive oil

1 medium onion, chopped

1 large bell pepper, chopped

2 tablespoons garlic, chopped

2 1/2 tablespoons chili powder

1/2 tablespoon dried oregano

1 teaspoon ground cumin

1 cup water

1 (14.5 ounce) can chopped tomatoes

2 bay leaves

2 tablespoons GOLDEN BLOSSOM HONEY

1 tablespoon coffee, brewed

3 (15 ounce) cans red kidney beans, rinsed and drained

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Heat oil in a heavy large saucepan over medium heat. Add onion, pepper and garlic. Saute until vegetables are tender. Add chili powder, oregano and cumin. Saute for 5 minutes. Pour the water into the mixture and stir to combine. Mix in tomatoes, bay leaves, honey, coffee and kidney beans. Bring to a boil. Reduce heat and simmer for 45 minutes. Remove bay leaves before serving.
Variation: Add one pound of ground beef to the onion mixture.
