Candied Sweet Potatoes

Ingredients

6 sweet potatoes

1/3 cup GOLDEN BLOSSOM HONEY

1/2 teaspoon grated lemon rind

1 1/2 Tablespoons lemon juice or 1/8 teaspoon ginger

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Preheat oven to 375°. Cook potatoes in boiling water or microwave until tender. Pare and cut potatoes lengthwise in 1/2-inch slices. Place in a shallow greased baking dish. Season with salt and pepper and drizzle with the remaining ingredients. Dot with 2 Tablespoons butter and bake uncovered, for about 20 minutes.
