Glazed Gingered Carrots

Simple, beautifully glazed and fresh tasting, the carrots are infused with just a hint of ginger.

Ingredients

1 pound carrots cut diagonally into 1/2-inch slices

2/3 cup vegetable or chicken broth

1-inch piece fresh ginger, cut into 4 rounds

1 tablespoon butter

2 tablespoons GOLDEN BLOSSOM HONEY

1 clove garlic, minced

dash of crushed red pepper flakes

1 tablespoon fresh parsley, chopped

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Combine all ingredients except parsley in a large skillet or saucepan. Do not use a small pan as the liquid will not cook down and glaze carrots. Bring to a boil, lower heat and simmer uncovered for 10 -15 minutes or until carrots are tender and glazed and liquid has evaporated, stirring occasionally.
To serve, discard ginger slices, spoon glazed carrots into a bowl and sprinkle with chopped parsley.
