Glazed Vegetable and Fruit Casserole

Ingredients

1 1/2 Tablespoons butter

1/4 teaspoon ground ginger

1 cup celery, chopped

1 cup carrots, sliced

1 cup onions, sliced

1 cup apples, chopped

1/2 cup canned apricots

1/4 cup water

1/2 teaspoon salt

1 teaspoon grated orange zest

3 Tablespoons GOLDEN BLOSSOM HONEY

1/4 cup orange juice

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Preheat oven to 375°. Cook celery and carrots in 1 cup of salted water, until just tender, about 10 minutes. Drain. Arrange in casserole with sliced onions, apples, apricots and water. Sprinkle with salt and orange zest. Drizzle honey and orange juice over all. Dot with butter and sprinkle with ginger. Bake for 25-30 minutes. Serves 4.
