Jacques Pepin’s Honeyed Sweet Potatoes

Ingredients

3 pounds sweet potatoes (2 large or 3 small)

2 Tablespoons butter

1/4 teaspoon salt

1/8 teaspoon freshly ground black pepper

3 Tablespoons GOLDEN BLOSSOM HONEY

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Rinse sweet potatoes under cold water. Cut into 1 ½-inch thick slices. Cover with cold water, bring to a boil, and boil for 5 to 6 minutes. Set aside. Melt butter in a large skillet. Add slices of sweet potatoes in one layer. Sprinkle with salt and pepper and brown for 2 to 3 minutes on each side. Add honey, cover, reduce heat to very low and continue cooking for 4 to 5 minutes.
