Mediterranean Zucchini with Carrots and Golden Raisins

The sweetness of golden raisins along with the crunch of almonds will make this your favorite zucchini dish.

Ingredients

1 Tablespoon butter

1 clove garlic, chopped

6 cups zucchini, grated

1 Tablespoon GOLDEN BLOSSOM HONEY

3/4 cup carrots, grated

1 Tablespoon fresh lemon juice

3/4 cup slivered almonds, toasted

3/4 cup golden raisins

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

In a large pan over medium-high heat, saute garlic in butter until lightly browned. Add zucchini and honey. Continue cooking for 3-4 minutes, until zucchini is bright green, stirring often. Add carrots and lemon juice. Saute for one minute. Remove from heat and drain excess liquid.
Transfer to a serving bowl. Mix in almonds and raisins. Serve immediately.
