Orange Yams

An ideal accompaniment for ham, turkey or lamb.

Ingredients

3/4 cup half & half

1/2 cup orange juice

3 tablespooons GOLDEN BLOSSOM HONEY

4 tablespoons butter or margerine

2 tablespoons grated orange zest

2 teaspoons ground cinnamon

1 teaspoon ground ginger

2 1/2 pounds yams, peeled and grated

salt and pepper, to taste

No need to refrigerate it. It can be stored unopened, indefinitely, at room temperature in a dry cupboard.

Directions

Preheat oven to 350°.
In a large skillet, combine first 7 ingredients and bring to a boil, stirring constantly. Add yams, salt and pepper. Spoon mixture into baking dish and cover tightly.
Bake 1 ½ hours, stirring occasionally.
Serves: 6-8
