Quick Harvard Beets

Microwave Recipe

Ingredients

3 Tablespoons GOLDEN BLOSSOM HONEY

2 teaspoons cornstarch

1/4 teaspoon salt

1/4 teaspoon cinnamon

pepper

1 large can sliced beets, reserve juice

1/4 cup white wine vinegar or cider vinegar

2 Tablespoons butter or margarine

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

Combine honey, cornstarch and seasonings in a microwave-safe dish. Whisk in 1/3 cup beet juice and vinegar. Microwave uncovered on HIGH 1 ½ minutes until thickened, stirring once. Add beets, cover and microwave on HIGH 2 to 3 minutes, until heated, stirring after 1 ½ minutes. Stir in butter. Let stand 3 minutes before serving. Serves 4.
