Sauteed Spinach and Apples

An easy last minute side dish that is really delicious.

Ingredients

1 pound spinach, rinsed and stems removed

1 1/2 Tablespoons olive oil

1 small onion, thinly sliced

1 tart apple, peeled, cored and sliced lengthwise

2 Tablespoons balsamic vinegar

1 Tablespoon GOLDEN BLOSSOM HONEY

salt and pepper to taste

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.

Directions

In a large saucepan of boiling water cook the spinach for 5 minutes. Drain and set aside.
In a skillet heat oil over medium-high heat. Add onion. Stir until lightly caramelized, about 3 minutes. Add apple slices. Cook about 2 more minutes. Stir in spinach.
Increase heat to high. Stir in vinegar and honey. Mix until all ingredients are coated, about 1 minute.
