Ingredients
1/3 cup olive oil
5 garlic cloves, peeled and flattened
4 large bunches of spinach (or 4 bags)
1/2 cup golden raisins, soaked in warm water
1/3 cup pine nuts, toasted
1 teaspoon GOLDEN BLOSSOM HONEY
salt and pepper to taste
1 teaspoon lemon juice

Honey is one of the oldest foods in existence. It was found in the tomb of King Tut and was still edible since honey never spoils.
Directions
In a large skillet, heat olive oil. Sauté garlic until lightly browned. Discard garlic. Add spinach. Cook, covered over high heat, until just wilted. Drain raisins. Add to spinach along with pine nuts and honey. Stir in lemon juice and cook until liquid is almost evaporated. (about 4 minutes). Serves 4-6.
